What is Atlantic cuisine with Canarian roots
Our kitchen works with produce from the Canarian Atlantic: fresh fish from the port, local vegetables, Lanzarote olive oils, aged Canarian cheeses, papa bonita and mojos. The technique is contemporary; the origin is Canarian tradition.
Each season redefines the menu. In summer, raw preparations, tiraditos, vegetables and fresh fish dominate. In winter, longer cooks, aged meats and a different approach to local produce take over.
