Porcini Carpaccio: Mini ravioli filled with Canarian cheeses, drizzled with truffle oil.

Local Fish: Served with a sweet and sour vegetable foam, cooked in a Kamado grill, herb-infused oil, and a small chop of sun-dried tomatoes and pickles.

Pressed Black Pig: Accompanied by a spring onion purée, truffled celery root, and a thyme-infused cooking sauce.

Coconut and Lemongrass Cream: Pineapple ice cream with caramel and a whisky foam.
